Lena and Co is the six of us — two parents and four children — running every part of the trailer together. The kids work the window, the ovens run all morning, and the starter comes everywhere we go. What makes us special is simple: a family recipe for slow-fermented sourdough, passed down and baked fresh for every event. We never rush a ferment and we never reach for commercial yeast, because the slow way is the whole point.
Our one sourdough culture is fed daily — it's the beginning of every cracker, roll, and loaf we make.
Doughs rest and rise on their own schedule, developing the depth and gentle tang that shortcuts can't fake.
The final bake happens in the trailer, on site — so what reaches your guests is hours old, not days.
